Apple Pecan Salad

Okay friends, I don’t know about you all, but it took me a LONG time to truly understand that not all salads are equal. That some salads are actually DELICIOUS. And since we are all about wellness over here, I’d thought I would share my FAVORITE salad with you all. This is definitely more of a fall salad, yet I eat it all year round. It’s pretty scrumptious. (Pro tip: Make it the night before to let the dressing marinate the kale) Let me know what you all think!!

Ingredients:

  • 2 bunch kale, chopped (should equal to about 5 cups of chopped kale)
  • 3 apples, chopped
  • 1/4 cup dried cranberries
  • 1 cup cooked whole grain Israeli couscous
  • 1/4 cup pecans
  • 4-6 oz. lean protein

Dressing:

  • 2 Tbsp apple cider vinegar
  • 2 Tbsp olive oil
  • 1/2 Tbsp maple syrup
